ok, changed the water sensor, fitted new expansion tank and cap, new thermostat, flushed and back flushed rad and block, refilled with quality coolant and checked for air locks. So why does the fan keep kicking in when it gets to operating temp (halfway up on the temp dial)

Is the cooling fan running all the time?
If it is just cutting in when the temp gauge gets to the middle thats normal but it should cut out after a couple of minutes.
There is a cure if its running most or all of the time which is a modified loom. I fitted this to mine many years ago and ive never had any problems with it since.
If you need the part number for this part let me know and i will find it for. The loom is still avaliable and costs around 30 quid.
Hope this helps

The fan is suposed to run now an then, more so in traffic and especially when stationary, since that will be the only thing moving air across the radiator. When the car is moving, the fan should not be running since there should be enough air moving across the radiator anyway.

I get that the fan runs now and again and why, I was just wondering why it does it when its only at the normal running temp, instead of when its above this.

Sounds normal to me jez, the gauge on the dash is only a rough guide of the engine temp. until it starts to affect charging rate etc id just leave it alone, or try the lead spam mentioned
